New Side Dish

The other day I was searching for Fall salad recipes for inspiration! I actually came across this recipe which uses a “summer” vegetable. Summer Squash Dressing. I made it and it was very very delicious! I always make the traditional Thanksgiving meal but this year I will be adding this recipe that is how good it was. I will say it uses cream of mushroom soup and I am not a big fan of it but it works well in this dish. I also don’t use the milk, I replaced that with chicken broth and only do about half the milk called for as broth. I also sautéed the squash with the onion, skipping the boiling step. I hope you will give it a try and maybe you will have a new Thanksgiving side as well! Today is November 1 and Thanksgiving will be here before we know it!

I have always shopped for produce at Spicknall’s which is in Beltsville. Since joining a CSA farm, I have not been by as much. The other day I was out that way and decided to stop by. They truly have the best apples anywhere! They also had the yellow squash I needed for this recipe and although it is October it was some of the freshest squash I’ve had all year. If you are in the area stop by and check it out! They have many varieties of apples, pumpkins, mums, hay, beans, cuks, the list goes on and on and they sell jams and condiments!

Now to figure out how to preserve the yellow squash until Thanksgiving! I might try freezing it!
