Hello! I have been trying to come up with new breakfast recipes/ideas for my family. I remembered a preschool parent had shared a recipe with me many many years ago for orange muffins. When I pulled the recipe out, I also had an orange bread recipe from a friend, they are pretty similar. I wanted my muffins to be a little healthier though. I adapted the muffin recipe to make it healthier and to make less muffins as I thought we didn’t need so many. I hope you enjoy what I came up with! ENJOY!

Orange Muffins
Combine 1 cup flour with 1/2 cup sugar, 1 tsp baking powder and 1/2 tsp baking soda.
Combine 1 egg with 1 heaping tsp orange peel, 1/2 cup orange juice and 2 TBSP apple sauce.
Combine the wet ingredients into the dry. Stir just until combined. Place in 24 mini muffin papers. I also got a small ramekin with the mini muffins, I just sprayed the ramekin very well with Pam. Bake in a preheated 350 degree oven for 10 minutes, check after 8 minutes. The ramekin will take 15 to 20 minutes. ENJOY!
