Parisian Carrots

Starting the week with a simple yet delicious vegetable combination! I was in Trader Joe’s awhile back and had some time to truly look at their products. Normally I run in to pick up our TJ staples and then leave. This time I took my time and I’m so glad I did! I found Parisian Carrots in the frozen section. I normally don’t use frozen foods but these were “cute” carrots and I had to try them! They are little round carrots, like little balls! I also picked up frozen brussel sprouts, couldn’t remember trying brussel sprouts and wanted to. I roasted the carrots and brussel sprouts in a 350 degree oven for 30 minutes with olive oil, salt and pepper. I removed them from the oven, placed them in a bowl together with small mozzarella balls and splashed in balsamic vinegar. Delicious! This would make a great, quick side for Thanksgiving! I went back and picked up several bags, they will be on my Thanksgiving table! ENJOY!
