I found a new flourless cookie recipe making them Gluten Free! This recipe is similar to my Easy Peanut Butter Cookies. So easy to mix up and quickly bake! I always use my Kitchen Aid mixer for all baking but I didn’t for this, that’s how quick it was! ENJOY!

Flourless Peanut Butter Cookies
(From King Arthur Flour, the only change is I didn’t add mini chocolate chips)
1 cup peanut butter
¾ cup brown sugar
½ tsp. baking soda
Pinch of salt
1 egg
1 tsp vanilla
Mix the first 4 ingredients, add the egg and vanilla. I used my mini cookie scoop and we got about 24 cookies. Bake at 350 for 8-10 minutes.
