Pizza Quiche

I have recently started going through old tried and true recipes that I have not used in a while. My recipes are pretty well-organized but I’m starting to take all my old recipes and file them separately. I use 3 inch binders, I place 2 recipes in a plastic sleeve then in the binder. I use regular dividers to separate the recipes into categories. I am now making one binder tried and true old recipes since I have plenty to fill a binder! I use different plastic sleeves based on the size of the recipes, if it is on a piece of paper or a recipe card.

The recipe I am sharing with you today came from a friend many years ago when my daughter was in a playgroup. I think we started the playgroup when my daughter was about 18 months old, she is now 19! I use to make this for my children a lot when they were younger. It is quick, easy and tastes delicious! Give it a try!

Pizza Quiche (my friend has Pillsbury written on the recipe card, I have adapted it per my family’s tastes)

1 pie crust (I use the Trader Joe frozen)

3 cups shredded mozzarella cheese

2 cups shredded Trader Joe 3 cheese blend

1 bag chopped pepperoni

3/4 cup milk

3 eggs

black pepper, garlic powder and red pepper flakes

Heat the oven to 400 degrees. Place thawed pie crust in a pie plate. place cheese and pepperoni in pie pan. I layered so it was evenly distributed. Whisk eggs, milk and spices together. Pour over the cheese and pepperoni. Bake for 40 minutes or until a knife inserted in middle comes out clean. You may want to cover the edge of the crust the last 10 minutes to prevent the crust from over browning. Let stand 15 minutes before serving. You can serve with a side of spaghetti sauce. ENJOY!
