Pot Roast

We celebrated my dad’s birthday on Sunday. I always have dinner for everyone’s birthday and normally the birthday person gets to choose what they would like. My dad choose Pot Roast. It is one of his favorites. I do not normally cook red meat and I hadn’t made a Pot Roast in forever! I looked over a few recipes online then decided with my trusty Pampered Chef Deep Dish Baker I could pull off a Pot Roast without a lot of difficulty! Here is how I did it. ENJOY!

Pot Roast

2 ½ lb. Chuck Roast

6 Yukon Gold potatoes, peeled and chopped

10 pearl onions, skins removed

4 carrots, chopped and peeled (same size as potatoes)

1 package onion soup mix

½ can beef broth

First I chopped all my veggies and placed them in the bottom of the Deep Dish Baker. Then I sprinkled the roast with salt, pepper and half of the onion soup packet. I browned both sides of the roast in a skillet with olive oil. Once browned, I placed the roast in the baker. Sprinkle with the other half of the onion soup mix and pour the beef broth all over, even on the veggies. Place the lid on and Bake at 325 degrees for about 2 hours. My dad really enjoyed it and I sent the leftovers home with him for beef sandwiches! ENJOY! Sorry no pictures! I was busy preparing other things and just forgot!
