Today I am sharing a fabulous Fall recipe! I found several recipes for pumpkin granola on Pinterest and adapted my recipe from those. I’m wondering why it took me so long to discover this gem! It is a MUST try, so delicious! ENJOY!

Pumpkin Granola
½ cup canned pumpkin
1 tsp. cinnamon
½ tsp. nutmeg
¼ tsp. ginger
½ cup light brown sugar
2 TBSP. maple syrup
1 tsp. vanilla
3 cups old-fashioned oats (use gluten-free if need to)
½ cup pecans
¼ cup pumpkin seeds
¼ cup dried cranberries
Preheat oven to 350 degrees. Place oats, pecans, pumpkin seeds and cranberries on a stone baking sheet or on a regular baking sheet lined with parchment. Mix together with your hands. In a bowl mix the first 7 ingredients until combined. Pour over the oat mixture and mix with your hands until combined.
Bake for 25 minutes, stirring a few times during baking. Allow the granola to cool on the baking sheet, this will allow it to crisp up.
