Quick last minute gift idea

Happy Tuesday! Christmas is almost a week away, are you ready?? I’m getting there, wrapped a few gifts today and only need to purchase 2 more things. I still have a lot to bake. Today I am sharing a nicely welcomed gift that is super easy to throw together, you could put it all together from the grocery store. I am posting a recipe from the Chex website (chex.com) that is easy to do and very tasty but you could opt for granola from the store instead. Wegmans has granola you can purchase by the pound.

Breakfast Gift Basket

This gift is a welcome addition to any Christmas morning and if you want to add extra love to it, bake a coffee cake or muffins to go with! I am always on the lookout for containers but always go through your house before purchasing your container, you probably can find something you already have. And a simple gift bag will work to. Remember, it is suppose to be stress free and easy! In your basket you can put any items you feel the recipient would like for a simple quick breakfast. Here are my ideas:

Mandarin oranges (Trader Joe’s sells a box of them for $5.99, you can give some away and have some for yourself)

a few bananas

a bag of Chex Breakfast to Go

a few packets of ready to make oatmeal

small packs of almonds

small containers of fruit yogurt

tea bags or small bottles of orange juice

If using a basket always wrap the basket with cello wrap and tie with a bow, it makes for a beautiful presentation!

Chex Breakfast to Go ( I do not put in the almonds or blueberries or raisins.)

Ingredients

1/4

cup sugar

1/2

teaspoon ground cinnamon

1/3

cup butter or margarine

1

cup Corn Chex® cereal

1

cup Rice Chex® cereal

1

cup Wheat Chex® cereal

1

cup Honey Nut Cheerios® cereal

3/4

cup toasted sliced almonds

1

cup dried banana chips

1/2

cup dried blueberries or raisins

Each Chex® cereal adds its own oven-toasted flavor and special crunch, but you can use any combination of your favorite Chex® cereals.

Make & Take

Layer the mix with your favorite yogurt in a disposable covered container for a parfait-to-go!

Substitution

Other dried fruit can be substituted–try dried cranberries or dried apples.

Preparation Directions

1.

In small bowl, mix sugar and cinnamon.

2.

In large microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in cereals and almonds until evenly coated. Microwave uncovered on High 2 minutes, stirring after 1 minute.

Stir in sugar mixture and banana chips until evenly coated. Microwave uncovered on High 1 minute. Spread on paper towels to cool. Place in serving bowl; stir in blueberries. Store in airtight container.

Oven Directions: Heat oven to 300°F. In small bowl, mix sugar and cinnamon. In ungreased 13×9-inch pan, melt butter in oven. Stir in cereals and almonds until evenly coated. Bake uncovered 15 minutes. Stir in sugar mixture and banana chips until evenly coated; bake an additional 15 minutes. Spread on paper towels to cool, about 15 minutes. Place in serving bowl; stir in blueberries. Store in airtight container.
