Roasted Chicken

Happy Friday! Today I am sharing one of my favorite go to meals, Roasted Chicken. It is so easy, delicious and you can get several meals out of it depending on how many people you are serving. I use the Pampered Chef Deep Dish Baker to roast my chicken and it is worth the small investment. There are many quick and easy recipes you can make in it.

I wash a whole chicken and pat it dry. Place it in the baker or a regular roaster pan, pour olive oil over the top covering most of the chicken then add your favorite spices, be generous with your spices. I use Red Robin seasoning, onion powder and dill (or oregano instead of dill) Put the lid on the Baker or cover your pan with foil and roast in a 375 degree oven for 90 minutes! Serve the chicken as your main dish with a few sides then the next day make chicken salad and/or chicken noodle soup with the leftovers. You can also freeze the cooled, cooked chicken to use later BUT remember to remove it from the bone prior to freezing. Enjoy!
