Scallops in butter sauce

Today I am sharing a delicious seafood recipe with you! It comes from Ina Garten, the Barefoot Contessa. I adjusted a few things per our tastes. This is a must try if you like seafood!

1/2 pound sea scallops (pretty pricey right now, so I just used a half, the original recipe calls for a pound) sprinkled with flour, salt and pepper on both sides

Melt 2 TBSP butter in a fry pan, when hot and melted add the scallops and cook about 2 minutes on each side. Then add 2 more TBSP butter, 1/3 cup chicken broth, shallots, garlic and parsley. I used garlic powder, dried garlic and one whole shallot chopped fine. It would have even more flavor if you used fresh garlic and parsley. Cook about 2 more minutes until the sauce thickens and the scallops are done. I served it over a bed of rice! Very flavorful! ENJOY!
