Today’s decadent but light salad is my newest creation! I could eat this everyday for lunch! If you enjoy seafood, it is a MUST try! It would be a great addition to any luncheon! ENJOY!

Shrimp and Crab Salad by Debbi K.
8 large cooked shrimp, chopped
1/2 cup fresh crabmeat
1/2 cup shredded carrots (I use a box grater to shred my carrots)
1 scallion, chopped with the green tops
1 tsp fresh chives
Hellman’s light mayo, didn’t measure, I start out with a teaspoon and add until I get the consistency I want. I never use a lot of mayo.
Toppings: purple cabbage, shredded the same way as the carrots, roma tomato chopped, avocado, fresh bacon crumbles
Mix the salad ingredients gently together in a bowl. You do not want to break the lumps of crab. Mix in your mayo and stir gently until combined. I added a layer of toppings to a large iceberg lettuce leaf then placed the salad on top then more toppings. I served rice crackers on the side. SO YUMMY! I got 2 servings out of this recipe!
