Shrimp Nachos

I am sharing a recipe creation that is quick and easy to throw together on those busy nights! It is also a good one to adjust well to individual tastes! My husband and I were going to make shrimp tacos one night for a quick dinner. During the day, I thought we should try shrimp nachos instead and this recipe was born! We use Xochitl chips found at Wegmans for the base. These tortilla chips are lighter and crisper than most. ENJOY!

Shrimp Nachos

Place tortilla chips on a foil lined pan; set aside.

I used frozen cooked shrimp from Trader Joe’s, thaw slightly under cold running water. Saute onions and garlic in a small amount of butter for about 5 minutes, add in shrimp and cook about 2 more minutes. Then build your nachos!

For my nachos I did the shrimp with cheese.

For my husband’s….he used shrimp, southwest seasoning, Trader Joe’s Hatch Valley green salsa, dried roasted red peppers and mexican cheese.

Bake at 350 for 10 minutes.

Serve with an avocado that you mix with salt, pepper and lime juice until smooth. Delicious!
