Shrimp with Zucchini Noodles

Welcome to December! This month came on quite fast! My prayer for you is that you can slow down a bit this month and enjoy each moment! I am trying to not allow the hustle and bustle of the holiday season to bring stress into my life! I wish the same for you!

I am sharing another delicious recipe inspired by a recipe on my Facebook friend Louise’s page! It is light and healthy. It can also be made very quickly! Good one for busy nights and great for lunch leftovers! ENJOY!

Shrimp with Zucchini Noodles

2 tablespoons salted butter

1/2 cup chopped onion

cleaned fresh mushrooms sliced (I used about 1/2 cup)

14 frozen, thawed cooked shrimp

 ½ tsp garlic powder, onion powder and sprinkle black pepper

1/4 cup chicken stock

1 tsp arrowroot

1 cup zucchini, spiralized into noodles

2 tablespoons shaved mozzarella

Melt the butter in a skillet, add onion and mushrooms, cook about 10 minutes. Add chicken stock. Stir in 1 tsp arrowroot. Then toss in shrimp and zucchini. Sprinkle with shaved mozzarella! DELICIOUS
