Slow Cooker Barbacoa

I recently saw a menu with Barbacoa on it. I had never heard of this before. I started researching recipes and followed several to create my own version using the slow cooker. I am always on the lookout for spicy new recipes! My husband really enjoyed this dish! He put it on a flour tortilla with salsa and cheese. I will serve it later in the week in a baked taco. It made the house smell delicious! Give it a try! ENJOY!

Barbacoa

2 pound chuck roast cut into chunks

1/2 can chipotle in adobe sauce

2 garlic cloves minced

4 ounce can chopped green chilies

1/2 white onion chopped

1 TBSP apple cider vinegar

1 tsp cumin

1 tsp oregano

1 tsp southwest seasoning

pinch of salt and pepper

pinch of ground cloves

1/2 cup chicken broth

Add a TBSP of olive oil to your slow cooker. Mix all ingredients and stir to combine. Cook on high for 4 hours! ENJOY!
