Slow Cooker Green Beans

A hero is an ordinary individual who finds the strength to persevere and endure in spite of overwhelming obstacles. Christopher Reeve

I enjoy vegetables and really like finding new ways to cook them! A few weeks ago at the Farmer’s Market I discovered a green bean called the Roma bean. I had never seen or heard of these before. They remind me of a flat italian bean. My last trip to the market, I purchased 3 quarts of them! I found this recipe on a favorite blog called Six Sisters Stuff. Check it out, they have some awesome recipes! I changed the recipe a bit and was very pleased with the outcome! Delicious! I am going to freeze some of the cooked beans! This recipe would be great for Thanksgiving since it is made in the slow cooker! ENJOY!

Slow Cooker Green Beans (adapted from Six Sisters Stuff)
1 TBSP olive oil
1 TBSP Better than Bouillon chicken base
1/2 onion (I always use sweet onions)
2 pounds fresh green beans (use Romas if you can find them)
1 1/2 cups Kitchen Basics Chicken Stock
salt, pepper and garlic powder

Spray your slow cooker with cooking spray. In a small saucepan, saute the onions in the olive oil and chicken base until translucent. Add the onions with all the other ingredients into your slow cooker. Season with salt, pepper and garlic powder. Cover and cook on low for 3 hours. If you like your beans really tender cook for 4 hours. ENJOY!
