Soup in a Pumpkin

Today I am sharing a recipe I recently tried. I saw it online and decided to try my own version! The results were very tasty! You simply take a small pumpkin, cut the top off and scoop the inside out. Just as if you were carving a pumpkin. I added 2 carrots peeled and sliced, 2 small potatoes, peeled and sliced, 1/3 onion diced, salt and pepper. Then fill the pumpkin with chicken broth. I left about 2 inches to spare so it wouldn’t spill over. I placed the pumpkin inside of a pie plate, in case anything spilled over, replaced the lid but first removed the stem. I baked it at 350 degrees for about 2 hours. Next time I would probably use canned carrots and potatoes and only bake about an hour and 10 minutes. My veggies were yummy just not as tender as you would expect but still good! Let your imagination take over on this one! Add the soup ingredients you enjoy the best! What is so delicious is when you take everything out the cooked pumpkin just comes off the sides and is part of the soup, so so yummy! ENJOY!
