One of my closest friends, Beth, is known for many of her yummy goodies! This coffee cake is one of them! Beth has a very generous and kind spirit! She is always thinking of others and she has given MANY of these coffee cakes as gifts! I have been the recipient a few times, delicious! The recipe is from her mother in law. Beth’s sister, Katie who is a mother to 5 and as wonderful as Beth, made these into muffins! I am trying that next! ENJOY!

Beth’s Coffee Cake
1 box yellow cake mix
1 small box instant vanilla pudding
1 small box instant butterscotch pudding
4 eggs
½ cup oil
1 cup water
1 tsp. vanilla
Topping
1 cup chopped nuts
1 cup brown sugar
1 tsp. cinnamon
Mix all the cake ingredients together and pour half into a 13×9 pan. Mix the topping ingredients together and place half on top of the batter in the pan. Top with the remaining cake batter then the rest of the topping. Bake at 375 degrees for 20 minutes then turn oven down to 325 and bake for 20 to 30 minutes. ENJOY!
