Spicy Baked Pork Chops

Welcome to February! So we have dug out from the Blizzard of 2016! The temperatures have started to warm and the leftover mounds of snow and ice are starting to get smaller! If you live in an area touched by the blizzard, I hope you were able to enjoy the peace and serenity the beautiful snow brought!

Today’s recipe is inspired by my dear friend Linda, who made something similar! It is very quick and easy! Makes a great weeknight meal! I made them pretty spicy, you could tone down the spice and use a milder jam. ENJOY!

2 boneless pork chops

1 TBSP butter

salt and pepper

southwest seasoning

2 TBSP Trader Joe’s Hot and Sweet Chili Jam

Preheat the oven to 350 degrees. Season the pork chops on both sides. Place in a small baking pan. I lined my pan with foil to make clean up easier! Add half of the butter on top of each chop. Bake for 35 minutes. When your timer has 15 minutes left, mix the jam with a splash of water to thin, and divide the jam among the 2 pork chops. Continue baking for the remaining 15 minutes. Once done check with a cooking thermometer. The recommended internal temperature of pork is 145 degrees. Delicious!
