Spicy Southwest Meatballs

Welcome to another Meatball Monday! This is a must try recipe that I created! It is Super Simple and very spicy! I use frozen cooked meatballs from the store! I normally do not use ready to use products but there are some days that call for quick and easy. I had the idea for the sauce and was planning to make the meatballs but then decided to give this a try and it worked great! My husband is not used to nor a fan of frozen cooked meats. I recently shared my “little secret” with him and he was very surprised! The sauce has such a kick to it and you cook the meatballs in it for an hour, I think those  combinations help disguise the frozen meatballs!! Olive oil

1/4 chopped Sweet Onion

1/ cup chopped carrots

1/4 cup chopped sweet peppers

1/2 jar salsa (I use what I have in my fridge)

1 small can Chiptole Peppers in adobe sauce (this adds the heat!)

1 cup Chicken Stock

12 ounce bag of cooked frozen meatballs

Southwest seasoning

Pepper

Saute the vegetables in the olive oil for about 5 minutes. Add in the salsa, chipotle peppers and chicken stock. Let cook 10 minutes on a slow simmer. Add in the meatballs turn to low and place the lid on your sauce pot. let cook for 1 hour, YUM! My husband likes to toast a sub roll, add pepper jack cheese and have a meatball sub! Serving it over white rice is delicious too and cuts the heat a little. ENJOY!
