Spinach Strawberry Salad

Today I am sharing a new salad recipe with you! A friend of mine recently found this online and shared it with me. I changed it slightly to meet my tastes. The dressing alone is VERY delicious! I have eaten it most days since she gave it to me! I hope you give it a try SOON!

Spinach Strawberry Salad

Baby spinach

Baby Romaine lettuce or regular Romaine

Sliced Strawberries

Feta Cheese

(I made sauteed Bay Scallops for dinner so I added them to my salad after I put the dressing on, very tasty in this salad!)

I don’t have measurements just use whatever amounts you like to make the salad!

Original recipe said you could add toasted pecans, sounds yummy if you can eat pecans!

Dressing:

1/4 cup olive oil

2 TBSP. Balsamic vinegar (original recipe calls for Raspberry Balsamic vinegar)

2 TBSP sugar (the original recipe calls for 1/4 cup but I reduced it)

1/8 tsp Paprika (I used season salt, didn’t have Paprika but my friend says this makes it very yummy)

Shake all ingredients together and ENJOY! No need to refrigerate!
