Strawberry Cobbler

Strawberry Cobbler
2 ½ cups fresh strawberries, sliced
1 heaping TBSP. sugar
2 tsps. Cornstarch
2 tsps. Cold water
¼ cup brown sugar
¼ cup quick cooking oats
2 TBSP. oat flour
3 TBSP butter, softened
Combine strawberries and sugar in a medium saucepan. Let sit in the pan for 20 minutes with no heat. After 20 minutes, stir strawberries and sugar over medium heat for about 5 minutes. Combine cornstarch and cold water, making sure cornstarch is completely dissolved. Add cornstarch mixture to strawberries. Continue to heat until strawberries start to boil, stirring occasionally. Remove from heat.
Combine remaining ingredients using a pastry blender to cut in the butter until mixture is crumbly.
Spoon strawberries into 2 ramekins sprayed with Pam, top with crumb mixture. Place ramekins on a baking sheet (lined with parchment paper) Bake in a 350 degree oven for 25 minutes. Adapted from chocolatechocolateandmore.com
