Strawberry Pie, oh my! I love all things strawberries! Oh and all things pie! This pie brings back many memories! We used to have a restaurant near us called Bobs Big Boy and they served this mile high strawberry pie! It was incredibly delicious! Many many years ago, when my children were small, a friend shared this pie with me and then shared the recipe! It was very similar to the Bobs Big Boy pie! I have been making it every year since she gave me the recipe!
Strawberries are in season now! The best time to make this pie! Last week we bought a flat of strawberries and then I went back and picked 10 pounds of berries! They are big and sweet this year! If you love strawberries, find a farm and go pick some! You will have a delicious fruit to enjoy AND it is a relaxing fun time! Go make a pie! ENJOY!

Strawberry Pie
1 quart strawberries
small 3 ounce box strawberry Jello
1 cup water
3/4 cup sugar
3 TBSP cornstarch
1 graham cracker pie crust or mini graham cracker crusts
Combine water, sugar, cornstarch and jello in a saucepan, bring to a boil over medium heat. stir until slightly thickened. It will start to change to a darker color, remove from heat. Allow to cool while you prepare your berries. Place your washed berries with the tops off (you can slice them but they look prettier left whole. Sliced is best in the mini crusts) in your pie crust. Once the mixture is slightly cooled pour over the berries. Refrigerate for 2 hours before serving. I serve with Cool Whip Lite. ENJOY!
