Strawberry Shortcake with a new discovery

Today I am sharing my go to recipe for Strawberry Shortcake. It is similar to a biscuit dough and bakes up nice and thick. Below the recipe, check out my new discovery! ENJOY!

Strawberry Shortcake (adapted slightly from an allrecipes.com recipe)

2 ¼ cups flour

4 tsp. baking powder

3 TBSP. sugar

¼ tsp. salt

1/3 cup butter

1 egg

2/3 cup milk

Preheat oven to 375. Spray an 8 inch baking pan.

Combine the flour, baking powder, sugar, and salt. With a pastry blender cut in the butter until the mixture resembles coarse crumbs. Add the egg and milk. Stir just until combined. Spread the batter into the pan. Bake for 15 to 20 minutes or until golden brown. ENJOY!

NEW DISCOVERY: I was in the cake supply store the other day and discovered this new to me product, thanks to the nice lady who works there! Can you say sweet and divine!!! It is called Rich’s BetterCreme. It comes in a carton like milk and it is a liquid. You beat it for at least 6 minutes and you get this thick yummy frosting like consistency, a little less thicker than icing. Also it is DAIRY FREE! I believe it might be gluten-free but it DOES NOT say so on the carton and I can’t find that info on their website. It does contain some soy based products. I was told, once whipped, it does NOT need to be refrigerated so you can use it in many ways, even on a cake for the frosting! Super simple, Super delicious! A MUST try if you like sweet cream!
