Strawberry/Tomato Bruschetta Salad

My neighbor and friend, Kathy shared this yummy bruschetta recipe with me, she serves it when she has company as an appetizer. The recipe comes from Ted Allen. As she was telling me about it, it made me think of a strawberry spinach salad. I got the recipe online then, made it with a few slight changes, then served it over a Spinach Salad with Mozzarella pearls on top, so delicious! It does sound like an odd combination but it is not! It has a slightly sweet and tangy flavor and tastes very refreshing! ENJOY!

Strawberry Tomato Bruschetta Salad

Mix:

1 cup strawberries cut in fourths

1 cup cherry tomato halved

1 clove garlic, minced

2 TBSP olive oil

2 tsp balsamic vinegar

salt and pepper

Allow this to sit for 30 minutes in the fridge.

Serve over a salad of Baby Spinach and Romaine lettuce. The romaine gives a good crunch! Add in pearl mozzarella balls, mmm good!
