Stuffed Tomatoes

Today’s creation was inspired by Louise who always has great healthy recipes! This is a good recipe to let your imagination go! There are so many great ideas for this, I know you will come up with your own creations! I’m sharing a stuffed tomato and a stuffed green pepper. I will also give you 2 of my other ideas for the tomatoes that I haven’t made yet! Make today wonderful! ENJOY!

Stuffed Tomatoes / Green Peppers

Brown a pound of ground beef with 1 carrot diced and 1/2 white onion diced. I add salt, pepper, onion and garlic powder and dried parsley. Cook thoroughly. Add cooked rice. This is your base for both the tomatoes and green peppers. You can leave the rice out if you prefer.

For the tomato, cut the top off and scoop out the pulp. Mix that with the above mixture and place in tomatoes. Place the top back on and bake at 350 degrees for 15 minutes. Add shredded cheese and bake 5 more minute.

I’m going to try a crab melt in the tomatoes for a luncheon I’m having. Mix crabmeat with a touch of mayonnaise, onion powder, chopped scallions. Place shredded cheese on top and broil for about 5 minutes.

Also trying a tomato with shredded cooked chicken, rice, carrots and onion with cheese. This one I will cook in the oven for about 15 minutes.

For the green pepper, cut the top off and remove the inside, seeds and all. Place the peppers in a pot of water and bring to a boil. Boil for 2 minutes. Place peppers in a baking dish. Add to the ground beef rice mixture southwestern corn, refried beans and salsa. Bake the green peppers at 350 for 20 minutes, top with cheese and bake 5 more minutes. ENJOY!
