Summer Minestrone Soup

Today I am sharing a Throwback Thursday recipe! I created this recipe over 2 years ago. It is delicious especially with home grown veggies! I recently made it with squash from my garden and carrots from the farm! You can serve it hot OR cold! Makes a nice, healthy snack too! ENJOY!

Summer Minestrone Soup


1 TBSP olive oil

1/2 onion, chopped

2 carrots, peeled and chopped

½ yellow squash, sliced

½ zucchini, sliced

1 potato, peeled and diced

½ can (15 ounce) diced petite tomatoes

1 cup chicken stock (I use Kitchen Basics)

2 cups water

2 handfuls of a small pasta (approx.. ¼ of a 16 ounce box)






Heat olive oil in a large saucepan, add onions and sauté 1 minute, add carrots and continue to sauté for 5 more minutes. Then add the rest of the ingredients and cook for 10 minutes or until pasta is fork tender but not too tender. Add the spices per your taste.
