Summer Minestrone Soup

Today was a beautiful day! The weather was wonderful! Had the doors open and enjoyed the breeze coming through the house! I was in a cooking/baking mood today so I created this Summer Minestrone Recipe, mmm tastes like summer in a bowl! So good! Feel free to add or take away veggies depending on what you have and be sure to get those veggies fresh from a farm if you have one close, nothing like eating local!!!

Summer Minestrone Soup

Ingredients

1 TBSP olive oil

1/2 onion, chopped

2 carrots, peeled and chopped

½ yellow squash, sliced

½ zucchini, sliced

½ can (15 ounce) diced petite tomatoes

1 cup chicken stock (I use Kitchen Basics)

2 cups water

2 handfuls of petite penne pasta (approx.. ¼ of a 16 ounce box)

Oregano

Salt

Pepper

 

Directions

Heat olive oil in a large saucepan, add onions and sauté 1 minute, add carrots and continue to sauté for 5 more minutes. Then add the rest of the ingredients and cook for 10 minutes or until pasta is fork tender but not too tender. Add the spices per your taste, I just “sprinkle” my spices!
