Welcome Monday with open arms! Around these parts…someone has turned up the heat! 2 days in the 90’s! Not sure we have seen Spring, we jumped right into Summer! Now I am NOT complaining at all! I am loving the sunshine and being able to be outside even if just for a bit! I am not wanting to heat up the oven too much though! This week I am going to share a few cold salads with you. Great to make ahead and have in the refrigerator for these hot days! Today’s recipe can be eaten hot or cold, I have always served it cold. I have been making this salad for quite a long time and I do change it up a bit. The original recipe comes from a great cookbook called Dream Dinners! Check it out sometime! In the meantime…stay cool where you are and ENJOY!
