Welcome Monday with open arms! Around these parts…someone has turned up the heat! 2 days in the 90’s! Not sure we have seen Spring, we jumped right into Summer! Now I am NOT complaining at all! I am loving the sunshine and being able to be outside even if just for a bit! I am not wanting to heat up the oven too much though! This week I am going to share a few cold salads with you. Great to make ahead and have in the refrigerator for these hot days! Today’s recipe can be eaten hot or cold, I have always served it cold. I have been making this salad for quite a long time and I do change it up a bit. The original recipe comes from a great cookbook called Dream Dinners! Check it out sometime! Summer Pasta (adapted from Dream Dinners cookbook)

1/2 box cooked Penne pasta

1/2 cup fresh chopped spinach

1/4 cup finely chopped onion

1 cup chopped andouille sausage

1 TBSP olive oil

splash of Balsamic vinegar

salt, pepper and southwest seasoning

In a medium size bowl combine pasta, spinach, onion and sausage. Stir in the seasonings. Then drizzle with olive oil and vinegar. Refrigerate for 1 hour then serve! Light and refreshing! ENJOY!
