Sunday Dinner

I love traditions, gatherings, just getting together with family and friends. In this life of busy, it is nice to stop and enjoy a meal together. Sunday is a great day to stop and just be with people, make connections. I have my family over a lot for dinner. I try to make sure we celebrate each and every occasion with a gathering! A gathering doesn’t have to be a big to do, it doesn’t have to be thought out, prepared weeks in advance and it does not need to be fancy! A gathering can be a simple Sunday dinner for 6. This past Sunday I had a small family dinner. I did a good amount of cooking yesterday, I prepared some foods for the week and also put together a simple, easy meatloaf dinner. Once I was at the end of my preparations for dinner, I was not feeling making the potato dish that I had planned (too many steps) so I put 7 potatoes in the oven to bake with the meatloaf, no fuss! A side note, I always make at least one extra potato when doing baked potatoes in case any are bad in the middle. I had made ginger lemonade earlier in the day for the week and I served that. I also tried a new cookie bar recipe and that was my simple, easy dessert made in the morning. I made homemade biscuits while the meatloaf cooked and while chatting with my family and I prepared with the awesome help of my daughter a simple vegetable, sugar snap peas with radishes. I just cut the ends off the peas and leave them whole, slice the radishes and saute them all together for a few minutes in a little butter, so fresh tasting and easy! I’m sure everyone has a go to recipe for meatloaf! I am sharing my basic recipe below. I don’t make meatloaf very often and I do change it up a bit each time I do it, so be creative and put yummy things your family likes in yours! ENJOY!

Meatloaf

2 pounds ground beef

2 tsp minced onion

dash of seasoned salt

1/2 cup shredded cheese

1/2 cup tomato sauce

1 egg

1 TBSP Worcestershire sauce

1/4 cup seasoned bread crumbs

Mix all together. Shape into 2 loaves and bake at 350 for one hour or until meat thermometer reads 165.
