I recently saw this recipe in Paula Deen’s latest magazine. I had not had a tater tot in a very long time!! The recipe spoke to me and I had to try it! I found Ore Ida Tater Tots which are Gluten Free, so had to try it! This isn’t something my husband and I will eat all the time but for a “throwback” recipe it was very very tasty! Give it a try for something different! Of course I adapted the recipe per our tastes! ENJOY!

Tater Tot Casserole (adapted from a Paula Deen recipe)
splash of olive oil
1 pound ground beef
1/2 chopped onion
3 TBSP arrowroot powder
2 carrots peeled and chopped
1/2 cup ketchup
3 tsp Dijon mustard
salt and pepper
1/2 cup plus 2 TBSP chicken stock
3 cups tater tots
1 cup shredded cheddar and mozzarella
Preheat oven to 425 degrees. Spray a baking pan with cooking spray. Heat the olive oil and add the ground beef, onions and carrots. Cook until the beef is browned and cooked thoroughly. Stir in the arrowroot powder, ketchup, mustard, salt and pepper, and the chicken stock. Mix thoroughly. Pour into the prepared baking pan. Top with the tater tots and bake for 10 minutes. Sprinkle the cheese on top and bake 5 more minutes. I served on a bed of lettuce with fresh cut tomatoes and pickles! SO YUMMY!
