Today I am sharing a refreshing salad recipe. I watched Jamie Deen make this and I adapted it to my taste. I also made this a salad for one! You can increase your amounts if you need it to serve more. You can make it ahead also! ENJOY!

5 radishes, cleaned and roasted with olive oil at 350 degrees for 30 minutes then sliced
6 grape tomatoes halved
chopped celery, not a huge celery fan so didn’t add a lot
2 scallions chopped
4 small mozzarella balls cut in fourths
olive oil
apple cider vinegar
salt and pepper
Place all vegetables in a bowl. Drizzle on olive oil and vinegar then add salt and pepper. Delicious!
