Triple Chocolate Espresso Cookies

Today is Tuesday, let’s all find the beauty in the day!

On my quest to go through my old tried and true recipes, I came across this little gem! This recipe did not have a name and I was pretty sure I had never tried it before! I discovered it was from a friend and that it was a Martha Stewart recipe. I did some adapting just simply based on what I already had in my baking pantry! It is always good to use what you have! I was able to use the espresso powder I had recently purchased for a creation I posted last week! I love when I purchase a specific item for a specific recipe and find other uses for it! I used 2 chocolate fan taste testers and got their seal of approval! Big hit! ENJOY!

Triple Chocolate Espresso Cookies

1 cup flour

1/2 cup Hershey cocoa

1/2 tsp baking powder

pinch of salt

1/2 cup softened unsalted butter

1 1/2 cups sugar

2 eggs

1 tsp vanilla

1 TBSP espresso powder

4 ounces semi sweet chocolate, melted

a full 1/2 cup dark chocolate chips

Beat the  butter and sugar until light and fluffy. Add the eggs and vanilla. Mix the espresso powder into the melted chocolate and add to the butter mixture. Add in the flour, cocoa, baking powder and salt. Mix to combine then add the dark chocolate chips. Place on parchment lined baking pans, I used my medium scoop and it baked a nice size cookie! Bake at 350 for 14 minutes. Your kitchen will smell so good!!!! ENJOY!
