Warm Autumn Salad

Today’s recipe is one I tossed together for something different with what I had in my kitchen. I only made it for myself but you could easily make it for more by doubling or more the recipe. It uses the Honey Nut Squash I introduced you to yesterday but you could substitute Butternut. This salad is light and tasty makes a great lunch or light dinner! ENJOY!

Warm Autumn Salad
1/2 pound fresh spinach
1 honey nut squash spiralized
1/4 cup chopped onion
1 garlic clove minced
olive oil
Saute all of the ingredients in the olive oil and cook until done about 10 minutes. Toss in cooked chicken at the end and stir just until heated. Serve with shredded cheese on top. YUM!
