I am sharing my latest salad recipe! I have been eating this for lunch for several days now! Perfect lunch for the summer! I think everyone has their own version of this but I changed it up a bit and hope you will enjoy it!

1 zucchini sliced and placed in a ziploc bag with dry italian seasoning and olive oil. You can leave this in the frig for a few days to pull out what you need in a hurry.
sliced mozzarella
sliced tomato (I’ve been using tomatoes from my garden, YUM!)
You simply grill the zucchini then layer a slice of mozzarella between 2 zucchini slices then a tomato slice then repeat. The warmth from the grilled zucchini will slightly start to melt the mozzarella. ENJOY!
