Baked Macaroni and Cheese with Tomatoes

Woke up today to a big chill! I even saw a brief moment of snow! LOVE it! If it is chilly in your neck of the woods, this recipe will warm you up! I have made this for many years, adapted from a recipe off the internet. I make it for parties a lot and there usually is none left. So snuggle up and let this dish warm you! ENJOY!
This week I am taking some time out for my family. I am posting today, Wed and Thurs and will be back for a full week with you next week!

Baked Mac and Cheese with Tomatoes

4 cups macaroni, I like to use penne pasta for this

1/2 cup Kitchen Basics Chicken Stock (you can use milk instead)

2 / 14 ounce cans of petite tomatoes

1 can tomato soup

1 cup Trader Joe’s 3 cheese shredded blend (you can sub in your favorite cheese)

1/4 to 1/2 cup italian breadcrumbs

Cook pasta, drain and add back into the pot. Add the stock or milk, tomatoes, soup and half of the cheese. Spread into a 13×9 greased casserole dish and sprinkle the other half of the cheese then the breadcrumbs. Bake uncovered for 30 to 40 minutes. If you want a crunchy topping……after you bake it place it under the broiler for 5 minutes. MMMM Comfort Food!
