Blueberry Scones

I can’t think of a better way to start a week then with Blueberry Scones for breakfast! I love this recipe! I adapted it from a Taste of Home recipe. It is quick to put together and not much sugar! Blueberries are very good for you too! Give it a try! ENJOY!

Blueberry Scones (adapted from Taste of Home)
2 cups flour
3 TBSP sugar
2 ½ tsp baking powder
Pinch of salt
Mix the dry ingredients together.
Cut in 5 TBSP cold butter into you get coarse crumbs.
Mix 1 Egg with ¼ plus 1 TBSP milk. Add to the flour mixture.
Fold in ½ cup frozen blueberries (you can also use fresh)
Pat the dough into a circle and cut into 8 wedges. Place on a parchment lined baking sheet and sprinkle each scone with sugar.
Bake at 375 degrees for 15 to 18 minutes until golden brown. ENJOY!
