Brown Rice and Quinoa Salad

Today I am sharing another creation! I wanted to make a quinoa salad but was unsure if my family would enjoy it. I could not find a small bag of quinoa at the store but I found this quick cook Brown rice and quinoa at Wegmans. It was quick and easy in the microwave and had a good taste. Using this product means you don’t have to add much seasoning because it already comes seasoned. This salad has a lot of flavor and is full of healthy yumminess! ENJOY!

I quick roasted carrots and radishes. I cut the carrots very small added salt and pepper and a splash of olive oil, I left the radishes whole. Roast at 375 for 20 to 30 minutes.

Then I sautéed about 1 1/2 cups fresh baby spinach with 2 spring onions chopped in olive oil. I cooked them about 10 minutes then added half a can of petite tomatoes.

Cook the brown rice and quinoa per bag instructions.

Once everything is cooked I add it all to the saute pan. Serve in a bowl with fresh Parmesan cheese over the top. YUMMY!

It tastes delicious hot OR cold! The leftovers make a great healthy lunch!
