Meatballs are a quick easy go to meal. You can add sauce, noodles or rice. You can serve them in a lettuce leaf with a tomato slice. You can serve them as an appetizer too! The possibilities are endless! You can make them ahead, bake them, then toss them in the freezer! I’m sharing my quickest chicken meatball today. I make these several ways but this one is the easiest with few ingredients and healthy too! ENJOY!

Chicken Zucchini Meatballs
I pound ground chicken
1 zucchini, shredded and squeeze the water out with a paper towel
1/2 to 1 cup shredded gruyere cheese
onion powder, salt and pepper
Combine all ingredients, form into meatballs. Drizzle with olive oil. Bake at 375 for 20 to 25 minutes. I check the temperature with a meat thermometer. ENJOY!
