Crab Salad

I love seafood! I have wonderful memories of growing up catching crabs and eating crabs with family. Crab is a healthy seafood to eat too! It is not the most inexpensive protein you can eat but it is delicious! I purchase the Phillips 16 ounce container of crab from Costco for about twenty dollars. For this recipe I can get four meals out of the one container, so not too pricey for four meals!

One thing I always say about crab, the less you do to it, the better the taste. Crab has such a great flavor, you truly do not need a lot of spices and add ons. Keep that in mind when adjusting crab recipes to your tastes. Always try less the first time you make a recipe and then add more the next time if you feel it needs it.

I have used crab many times in salad. I woke up one morning with this creation in my head. I did some adjusting and adding and came up with this! Hope you ENJOY it! I also love the look of this salad! It is a nice meal to eat when your food is pretty!! I serve it on a Boston lettuce leaf with tomato and avocado.

Melt 1 TBSP butter in a saucepan. Add in 1/2 cup spinach (you could add 1 cup if you prefer but I was going with my less is more approach), 1/4 cup sliced baby carrots and 2 TBSP chopped onion. Saute for about 5 minutes. Add in  8 ounces of crab. PLEASE NOTE, at this point you are JUST HEATING the crab. Gently stir the mixture until combined and warmed. Sprinkle with shredded Gruyère cheese and place on top of your lettuce leaf. YUMMY!
