Pasta is a quick inexpensive way to put dinner on the table. This recipe is one I’ve been making for a few years now. It is my go to lunch idea when I have unexpected company. It is warm and comforting! Enjoy!

Pasta with Veggies
1/2 box pasta cooked, any shape will work, I usually use penne
1 cup frozen peas
1 yellow squash, sliced
1 shallot
1 TBSP olive oil
1 cup Kitchen Basics Chicken Stock
1 TBSP cornstarch
Heat olive oil in a large skillet, add scallions, peas and squash. Cook for 5 minutes. Mix cornstarch in chicken stock then add to veggies, stir until thickened. Add pasta and serve. You can add chicken or you can add whatever veggies you have on hand. I sometimes sprinkle with dill and parmesan before serving.
