Today’s post is inspired by my beautiful friend Ann and a conversation we recently had over lunch! We were discussing eggplant, eggplant parmesan and pizza! So I created this delicious Eggplant Pizza. It was very easy to toss together and extremely delicious! One eggplant makes several pizzas, maybe you could try it with a good friend! ENJOY!

Eggplant Pizza

1 eggplant (I received this adorable eggplant in my CSA farm share recently!)

sauce (I use an italian tomato sauce that has spices made by Cento, use what your favorite is and what you have on hand)

spices, oregano, onion and garlic powder

shredded mozzarella cheese (TIP: I buy a block of mozzarella (NOT the soft ball) and shred myself. Pre shredded cheese, I have come to learn, has an added ingredient to keep it from clumping, sometimes it is flour or cornstarch)

olive oil

Slice the eggplant, sprinkle with salt and lay on paper towels to sweat some of the water out, about 10 minutes. Then place on a baking sheet, drizzle both sides with olive oil and bake at 400 degrees for 15 minutes. I turn my halfway through. Remove from the oven and add sauce, oregano, onion and garlic powder or your favorite spices and top with cheese. Place under the broiler for 5 to 8 minutes. MMMM Good!
