Fresh Tomato Soup

I made this yummy fresh tasting healthy soup. The recipe is based off a cream soup recipe from Ina Garten. I used a food mill to puree everything. If you do not own a food mill, try putting all your ingredients in a blender.

1 TBSP. olive oil
½ yellow onion chopped
2 carrots, peeled and chopped
2 pounds Roma tomatoes, chopped
1 potato peeled and chopped
1 tsp. sugar
1 tsp. tomato paste
1 1/2 cups Kitchen Basics chicken broth
garlic salt to taste
salt and pepper to taste

Sauté the onions and carrots in the olive oil for about 5 minutes. Add all the other ingredients and cook for 20 to 30 minutes until all the vegetables are tender. Process through a food mill. You can serve this hot or cold. I prefer hot with parmesan cheese on top. You can also top with croutons or even better top with small bites of a grilled cheese sandwich! ENJOY!
