I am enjoying finding new healthy ways to satisfy the “sweets”! I try not to eat sugar anymore and am constantly looking for recipes I can adapt with less sugar or no sugar. I also do not eat chocolate but wanted a recipe that would give a little taste of chocolate. In the recipe I give you the original measurement for the cocoa in case you want them with more of a chocolate taste. I love this recipe! It is a great go to when you need a little sugar in your life! ENJOY!

Healthy Chocolate Blender Muffin (adapted from a Six Sisters Stuff recipe)
1 ¾ cup old-fashioned oats
3 egg whites
¼ cup unsweetened cocoa (original recipe calls for ¾ cup if you want more choc)
4 ounce cup unsweetened applesauce (1/2 cup)
1 teaspoon vanilla extract
½ cup plain non-fat yogurt
½ teaspoon cream of tartar
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
pinch of salt
1 cup hot water
¼ cup sugar
Place all ingredients in a blender and blend until smooth.
Add ¼ cup mini chocolate chips in by hand. Place in paper lined mini muffin pans. Bake at 350 degrees for 10 minutes. Check for doneness with a cake tester. Makes 48 mini muffins! They are tasty cold from the frig too! ENJOY!
