Healthy Pumpkin Cookies

PUMPKIN! I LOVE everything about it! I love having pumpkins in my home to decorate with and I love cooking and baking with it! Today’s recipe is beyond delicious! It is a must try! I found it online and adapted the recipe to my preferences. Give it a try, it will make you happy! ENJOY!

Healthy Pumpkin Cookie

1/4 cup canola oil

1/4 cup honey

1 cup rolled oats (I use Gluten Free)

1 cup quick cooking oats (I use Gluten Free)

1/4 cup oat flour (again I used Gluten Free)

1/2 tsp cinnamon

1/4 tsp ginger

1/4 tsp nutmeg

pinch of salt

1/2 cup canned pumpkin

2 beaten eggs

Add ins, my favorite is about 1/2 cup mini chocolate chips OR 1/3 cup pumpkin seeds with 1/3 cup dried cranberries

Mix all ingredients and drop onto  a parchment lined baking sheet. I use my small scoop but they would be yummy using a large scoop, just adjust your baking time! Bake in a preheated 325 degree oven for about 20 minutes. Let cool on the baking sheet. ENJOY!
