Italian Chicken

Good Day to you! I have been experimenting with slow cooker recipes lately. I truly like the concept of the slow cooker but have never been too happy with the results. So I am trying to create recipes that will perhaps produce a better meal! I have been searching recipes, combining flavors my family likes and I think this recipe is a keeper! It is super simple and very delicious!

A few hints I think made this chicken come out moist and yummy: First I used very thick chicken breasts, I cooked it on high for only 3 hours (I could actually smell when it was done) and I coated the chicken with olive oil.

Italian Chicken in the Slow Cooker

3 thick boneless chicken breasts

1 can Hunts Petite tomatoes

1/2 onion, cut into chunks

olive oil

salt

pepper

oregano

Parmesan cheese shreds

Place the chicken in the slow cooker and coat both sides with olive oil, not too much. Then sprinkle each with salt, pepper and oregano. Put the onions on top of the chicken then pour the can of tomatoes over. Add a half can (from the tomatoes) of water. Place the lid on and cook on high for 3 hours. I served it over rice but my plan was to serve it over roasted Spaghetti Squash, could not find one in my stores! Serve with parmesan shreds on top. ENJOY!
