Lemon Biscotti

Today’s recipe is one I have had for a long time and made many, many times! I have even made it with a few friends. Biscotti is basically a cookie that is baked twice. It is not difficult to make! They are delicious served with coffee or tea as they are great dunkers! They also make a nice less sweet treat and are great for breakfast! Give them a try! ENJOY!

Lemon Biscotti (recipe adapted from a Cooking Light recipe)

2 3/4  cup flour

3/4 cup sugar

2 tsp baking powder

3 TBSP fresh lemon juice

1 TBSP grated lemon peel

1 TBSP canola oil

3 eggs

Preheat oven to 350 degrees. Combine the dry ingredients, set aside. Combine the wet ingredients then combine with the dry. Turn dough onto a lightly floured surface and knead 7 to 8 times. Divide the dough in half and shape each half into an 8-inch log. Bake on a baking sheet or stone that has been sprayed with Pam. Bake for 30 minutes at 350. Remove from oven, reduce oven temp to 325 degrees. Cut each roll into desired slices, place back on the baking sheet and bake 5 minutes then turn biscotti over and bake 5 more minutes. If you want very crunchy, hard biscotti bake for 10 minutes each side. Let cool. Mix powdered sugar and lemon juice and pour over top if you want a glaze! ENJOY!
