Little Chefs Week / Strawberry Jam Bars

Today’s recipe comes from one of my favorite resources for cooking with Little Chefs, the cookbook from Pampered Chef called Kids in the Kitchen! Unfortunately the book was discontinued awhile back but I have seen it on Ebay and perhaps you can find a consultant that might still have an extra. It has several recipes I have used in cooking with children. The recipe is called Slammin Jammin Berry Bars! It is a delicious, fairly quick recipe to whip up. It makes a great treat or even a fun breakfast treat.

Slammin Jammin Berry Bars (slightly adapted)

1 1/2 cups flour

1 1/4 cups oats, quick or old fashioned

1/2 cup packed brown sugar

1 1/2 sticks butter

1/2 cup strawberry jam

Mix flour, oats and brown sugar in a bowl. Using a pastry blender, cut in the butter until mixture looks like coarse crumbs. At this point it is fun to get your hands in to feel the coarse crumbs! Not too much as you don’t want to soften the butter. Measure out 1 cup for the topping and set aside. Press the remaining crumb mixture in a 9 or 8 inch pan then spread with the jam. Sprinkle the reserved crumbs. Bake at 375 for 35 minutes. ENJOY!
