Mandel Bread

Today the weather is extremely cold! My car temperature said 5 degrees! WHAT, I can’t remember when it was ever 5 degrees outside! BURRRRR! The best way to stay warm and cozy is to stay inside and bake! I have the perfect recipe for that! It is similar to biscotti and makes a lot. We usually share some, freeze some and of course eat some! ENJOY!

Mandel Bread

I found this recipe in a holiday Women’s Day magazine a few years back and we’ve been enjoying it ever since. I adapted it to my family’s tastes.

3 ¼ cup flour

1 tsp. baking powder

A pinch of salt

½ tsp. cinnamon

½ tsp nutmeg

3 eggs

1 cup canola oil

1 tsp pure vanilla (sometimes I add a splash moreJ)

¾ cup sugar

1 cup mini chocolate chips

Heat oven to 375. Combine the flour, baking powder, salt, cinnamon and nutmeg. In another bowl beat the eggs and add the oil, vanilla and sugar. Mix until combined. Add the flour mixture and chocolate chips. In a small bowl mix another ½ cup sugar with ½ tsp cinnamon and ½ tsp nutmeg. Divide the dough into 6 equal portions and shape into a 2 inch wide loaf, roll into the sugar mixture and transfer to a parchment lined baking sheet. Bake until golden brown and set 15 minutes. Remove from oven and slice into pieces about ¾ inch thick. Place back on baking sheet. Reduce oven temp to 350 and bake slices for about 12 minutes. Enjoy!
