Make today a great Monday!
This recipe is quick, easy and very refreshing! I think I made this once before many moons ago but I followed a certain recipe. For these I set out to make my own creation, base and all. I hope you will enjoy it!

No Bake Cheesecake
1 ½ blocks cream cheese at room temperature (so 1 big cream cheese and half of another. 12 ounces total)
½ cup sour cream
½ cup powdered sugar
8 ounce Cool Whip
Mix all ingredients until smooth and combined.
For my first pie, I poured half the mixture into a graham cracker crust and placed in the refrigerator. I served this with strawberries and chocolate sauce. Called it Chocolate Covered Strawberry Cheesecake!
The rest I used in a banana pudding. I sliced one banana tossed with lemon juice and layered the banana with Mini Nilla wafers and cheesecake mixture. I did three layers. YUMMY!
