Oatmeal Cookie Bar

I have re invented a cookie recipe to make a thicker bar cookie and to make it Gluten Free. I hope you will try it! ENJOY!

1 stick unsalted butter softened (1/2 cup)

2/3 cup light brown sugar (I add about 1 TBSP more)

1 egg

1 tsp. vanilla

¾ cup oat flour (place quick cooking oats in a food processor and pulse until turns into a powder like consistency) I use Gluten Free Oats but regular would work as well.

½ tsp. baking soda

½ tsp. baking powder

1 ½ cups old-fashioned oats

Preheat oven to 350 degrees.

Cream together the butter and brown sugar. Add in the egg and vanilla, mix until smooth. Mix the oat flour, baking soda, and baking powder together. Stir this into the butter/sugar mixture. Stir in the oats.

Place the cookie dough in a parchment lined 8 inch baking pan that has been sprayed with Pam. Place in the freezer for 30 minutes. This helps you achieve a thicker cookie bar. Remove from freezer and Bake 18 to 20 minutes or until golden brown. Let cool completely.
